Secrets of Hunters and Trappers -- fun and useful! 4 bear paws 1 c. moose milk, or cow's milk 1 lb. bear burger 1 onion, minced salt garlic Madeira wine 1 c. onion soup canned 1 lb. mushrooms Prepare bear claws by removing hide and claws. Soak in salt solution for 48 hours at 75° or less. Rinse in cold water. Simmer for six days, being careful to add water to keep paws covered. Change water for first four days every six hours. The last two days do not use any water, but substitute a good Madeira wine. On the sixth day sauté bear burger, onion, crushed garlic, and mushrooms. When browned, add Moose milk (may substitute1 cup sour cream diluted with half cup homogenized milk) and undiluted onion soup, or any soup you prefer. Salt and pepper to taste. Serve over hot, buttered noodles. Serves 4 to 6 or several dozen who know what they are eating for the first time. |
